ALL DAY CROCK POT DELIGHT

INGREDIENTS

2-3 lbs. boneless chuck, cut into 1 inch cubes
1/2 c. flour
1/4 c. butter
1 onion, sliced
1 tsp. salt
1/8 tsp. pepper
1 clove garlic, minced
2 c. beer
1/4 c. flour
 
Coat beef cubes with the 1/2 cup flour. Brown in melted butter. Drain off excess fat. In crock pot, combine browned meat with onion, salt, pepper, garlic and beer.
Cover and cook on low 5-7 hours (all day) until meat is tender. Turn control to high.
Dissolve remaining 1/4 cup flour in small amount of water. Stir into meat mixture, cook on high 30-40 minutes.
Serve with rice and salad.

Aztec Black Beans

Aztec Black Beans


AZTEC BLACK BEANS RECIPE:

Ingredients:

1 lb. dried black beans
16 oz. jar of salsa

Method:

Rinse black beans, removing any stones or foreign objects. Cover with water, soakall night.
Drain beans and place in cp with salsa. Add enough water to just cover beans.
Cover and cook on low 8-10 hours.

Oatmeal Raisin Bread


Oatmeal Raisin Bread Recipe
2 cups plain flour
½ cup sugar
1 tbsp baking powder
1 ½ tsp salt
1 tsp cinnamon
½ tsp baking soda
¼ tsp nutmeg
1 cup uncooked oats
1 cup / 5 oz raisins
½ cup / 2 oz chopped nuts
1 ¼ cups sour milk or butter milk
¼ cup firmly packed brown sugar
1 egg, well beaten
3 tbsp shortening, melted and cooled

Method:
Mix flour with sugar, baking powder, cinnamon, salt, baking soda and nutmeg. Stir in oats, raisins, and nuts. Make a well in the centre and set aside. Mix sour milk, brown sugar, egg and melted shortening. Add to dry ingredients all at one time; stir only enough to moisten dry ingredients.
Turn into a well-greased and floured slow cooker bake pan or 2 pound coffee can. Cover bake pan with lid; or if using coffee can, cover with 6 layers of paper towelling. Set in an slow cooker.
Cover and cook on High 2-3 hours. Remove bake pan and let cool 10 minutes before removing bread.

Gingerbread


Gingerbread Recipe

Ingredients:
1 ½ cups plain flour
½ tsp baking soda
pinch salt
1 tsp cinnamon
1 tsp ginger
½ tsp cloves
1/8 tsp nutmeg
¼ cup butter or margarine
½ cup sugar
1 egg
½ cup light molasses
2 tablespoons hot water
½ cup sour milk
Method:
Mix flour with baking soda, salt, and spices; set aside. Cream butter with sugar. Add egg and beat thoroughly.Combine molasses and hot water; add gradually to creamed mixture, blending well.Alternately add dry ingredients in thirds and sour milk in halves to creamed mixture, beating only until smooth after each addition.

Turn into a well greased and floured cake pan. Cover with 6 layers of paper towelling. Set in slow cooker.

Cover and cook on High for 2-3 hours.Remove bake pan and let cool 10 minutes before removing bread.

Boston Brown Bread


Boston Brown Bread
2/3 cup rye flour
2/3 cup whole wheat flour
2/3 cup yellow cornmeal
1 tsp baking powder
¾ tsp salt
½ tsp baking soda
1 1/3 cups buttermilk or sour milk
2/3 cup dark seedless raisins
½ cup molasses
Method:
Mix flours with cornmeal, baking powder, salt, and baking soda in a large bowl. Mix buttermilk, molasses and raisins, add to dry ingredients and stir only enough to moisten the flour.Pour batter into well greased and floured loaf pan or 2 pound coffee can. Cover with foil; tie. Set in slow cooker. Pour 2 cups hot water around can. Cover and cook on High 2-3 hoursRemove can and let cool 1 hour before unmoulding bread.

Banana Nut Bread


Banana Nut Bread Recipe
INGREDIENTS

1/3 c shortening
1/2 c sugar
2 eggs
1-3/4 c all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c mashed ripe bananas
1/2 c chopped walnuts

Method
Cream together shortening and sugar; add eggs and beat well. Sift dryingredients; add to creamed mixture alternately with banana, blending well aftereach addition. Stir in nuts. Pour into well-greased 4-6 cup mold (I used a ceramicsoufflé dish). Cover with foil and tie a string tightly around it to keep foil down.

Pour 2 cups hot water in slow-cooking pot. Place mold on rack or trivet (I modifieda metal veggie steamer) in pot. Cover with crock pot lid and cook on high 2 to 3hours or until bread is done. Be sure not to check bread during the first 2 hours ofcooking.

Banana Bread


Banana Bread Recipe

INGREDIENTS
1 3/4 c flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/3 c shortening
2/3 c sugar
2 eggs, well beaten
1 1/2 c banana, well mashed, overripe
1/2 c walnuts, coarsely chopped
METHOD
Sift together flour, baking powder, baking soda and salt. With electric beater onlow, fluff shortening in a small bowl, until soft and creamy. Add sugar gradually.Beat in eggs in a slow stream. With a fork, beat in 1/3 of the flour mixture, 1/2the bananas another 1/3 of the flour mixture, the rest of the bananas then the lastof the flour mixture. Fold in walnuts. Turn into a greased and floured baking unitor a 2 1/2 quart mold and cover.

Place on a rack in crock pot. Cover crock pot, but prop the lid open with atoothpick or a twist of foil to let the excess steam escape. 

Cook on HIGH for 4 to 6hours. Cool on a rack for 10 minutes. Serve Warm.
